It started one night when my 24-year-old son came home from a deep sea fishing trip off the coast of Mexico with a 60 pound Pacific bluefin tuna. At midnight we used gyotaku — the ancient Japanese fish printing tradition — to press that fish onto rice paper together. What happened next became the foundation of something I've been building toward for fifteen years.
